Yes as long as the trays are the same depth. So if you are using the shallow 1010 trays make sure to use the shallow 1020 trays.
Is there a difference in the gauge of microgreens trays? Meaning the thickness?
All the microgreen trays should have roughly the same thickness.
What are the benefits of getting regular height trays over the shallow ones and vice versa?
It really depends on what you are going and how you are growing. The shallow trays are ideal for most microgreens. They reduce the amount of soil/media that you need. These 1010 microgreen trays allow make it easier to harvest the greens due to the lower profile.
The taller 1010 trays are better for crops that need the extra-depth for either support on the sides or need to grow deeper into the media. They may also be more useful is you really need a lot of drainage and airspace between a deep tray and a shallow tray if you used both.

Yes they can. However they will just need to be oriented in the same way that they would sit in the 1020 (one side of the the 1010 is longer than the other).
